Rosemary Lemon Tart

Lemon is one of Dahlia’s go-to baking flavors. It’s bright and refreshing, and with Daisy’s garden blooming out in front of the Saltcliff Inn, why wouldn’t she toss in just a hint of fresh rosemary? You can make her recipe without the rosemary if you like.
Grab a tart pan (removable bottom types work best!) and get going!
Make the crust first, and then make the filling while the crust bakes.

Crust Ingredients:

• 1 1/2 cups all purpose flour

• 1/4 cup granulated sugar

• 1/2 tsp kosher salt

• 1/8 cup powdered sugar

• 8 tablespoons butter (melted)

• 1 tablespoon water

• 1 tbsp chopped rosemary (optional)

Crust Directions:

• Spray your tart pan with cooking spray and heat the oven to 350 F.

• Whisk all dry ingredients together in a big bowl. Whisk in rosemary, if using.

• Pour the melted butter into the dry ingredients and mix well. Add water as needed to create a dough that looks like big wet crumbles. It will come together, but not into a solid ball.

• Take little bits of the dough and press up the sides and into the bottom edge of your tart pan and then fill in the center with the rest. Press it all into an even layer and then prick with a fork all over the bottom.

• Bake for 10 minutes.

• Press with a measuring cup or glass back into shape gently, pressing the crust against the sides and bottom, then bake again for 5-7 minutes and set aside.

Tart Filling Ingredients:

• 1 1/2 cups granulated sugar

• 1/2 cup all purpose flour

• 2 tbsp cornstarch

• 1/2 tsp kosher salt

• 6 eggs, large

• 6 egg yolks, large

• 1 cup lemon juice, (from 5-6 lemons)

• 1 cup whipping cream (optional)

Tart Filling Directions:

• Preheat the oven to 325 degrees F.

• Whisk the sugar, flour, cornstarch, and salt together in a large bowl.

• Whisk in the eggs and egg yolks.

• Stir in the lemon juice and pour the filling into the crust.

• Bake 30 - 40 minutes or until the edges of the tart are beginning to turn golden. The filling should be slightly wobbly in the center. It won’t “look” done, but that’s what you want - it’ll set up as it cools. If it’s overbaked, it’ll crack as it cools.

• Top with whipped cream.
